Mexican Food Night at Home

One of the things I miss most about home is easy access to Mexican food. My hometown is full of amazing Mexican restaurants that are also very affordable. In Japan, though, Mexican food is hard to come by and a lot of the time it’s also very expensive. I went a couple years without eating Mexican food in Japan, but when I started craving it too much, I decided to get creative and just make it myself. I got a really good recipe for Mexican seasoning from a friend and learned to make homemade tortillas. I can now make really good Mexican food myself and for a lot cheaper than eating at a restaurant or buying packaged Mexican food ingredients at the store!
I’ve been watching my diet over the past few months and haven’t eaten Mexican food, but I was really in the mood for it this weekend and decided to make some! My wife makes tortillas, that’s her specialty. They’re much better than the ones you can buy at the supermarket, too. This time I made chicken fajitas, so I seasoned and marinated chicken, peppers, and onions. I also made Mexican rice and guacamole. I was really happy with how it came out! We ate burritos for dinner while watching our favorite show. It was a great time.
